I love making my own stewed fruits. It’s a great way to use up that fruit that has been sitting there unused as it gives them a new purpose and they are so versatile.
When I was in my early 20’s I used to stew apples for my breakfast in schweppes lemonade, as it has the right amount of sweetness plus the only other thing that schweppes lemonade contains is citric acid. It’s the only fizzy drink I allow my kids to occasionally drink although Bella still prefers plain mineral water.
Usually around Christmas time I buy a box of cherries as they work out to be cheaper per kilo, and I find that we roughly eat a kilo and the remaining kilo I stew. Last year however I think we are up to our 3rd box of cherries, and I’ve stewed quite a few cherries.
These stewed cherries taste so delicious on top of my Waffle and Paleo Banana Waffle recipes! My dad loves eating them with some ice cream and/or custard. They are good over a chia pudding or any cereal. They are also great to use in other sweet recipes (more on this later).
I love taking the seeds out of the cherries, as it makes it easier to eat, however, you don’t have to take the seeds out. My mum prefers making these stewed cherries by just rinsing the cherries and using them whole. It’s up to you what you would like to do. De-seeded them is messy, but I think it’s worth the mess.
The recipe can be easily doubled or tripled if you wanted to make a larger quantity. I often double the recipe. Just remember, before you start to have either enough small clean sterilised jars to store the hot stewed cherries. I usually use a 500ml jar which is jammed packed full of cherries.
- 500g fresh cherries (any type)
- ½ cup Schweppes Lemonade
- Rinse cherries.
- Remove all stems, and cut each cherry in half and remove the seed.
- Place de-seeded cherry halves into a medium sized saucepan.
- Add lemonade to saucepan.
- Cook over a low heat for 30 minutes.
- Carefully spoon (or pour) cherries and liquid into a clean sterilised jar and seal with the lid*,
